The food service industry has been and continues to grow at
a pace guaranteeing a steady need for trained people. Chefs are
needed in restaurants; hotels; private clubs; executive dining
rooms; caterers; institutions such as schools, hospitals, nursing
homes, and colleges; and in the rising new career of the personal
chef. Students receive classroom instruction and hands-on practice
in basic food safety and the preparation, decoration, and presentation
of soups, salads, sauces, poultry, fish, meats, side dishes,
breads, and desserts. Our facilities boast a restaurant serving
up to 300 people per day; a catering service allowing the student
to experience set-up, service, and presentation and a short order
grill. TABE testing required. Classes meet at the Community Education
Center and Florida State Fire College's Cafe Flambe. Hands-on
experience is supplemented by lecture, textbook, and demonstration.

(16 weeks at 2 hours)
Successful decorating begins with the basics of making and coloring
icing, preparing cakes, fillings, and using decorating bags.
You will learn the best ways to create cakes and icings that
are ideal for decorating and the "tricks of the trade" so
you can always get the results you want. Techniques are taught
step-by-step.
Wilton Cake Decorating - Course II
(16 weeks at 2 hours)
Take your decorating skills to a higher level! Build on the skills
you learned in Fundamentals. Master elegant new borders featuring
rosettes, reverse shells and rope design. Give your cakes incredible
dimension with the addition of bold color flow decorations. Create
lovely new flowers like the rosebud, lilies, daisies, daffodils,
mums and more.
Wilton Cake Decorating - Course III
(16 weeks at 2 hours)
Building on Course I and II, you will advance to professional
cake decorating techniques. Course will include assembling and
decorating a tiered cake.
